Where do you eat Stuttgart?
Eating in Stuttgart comes down to three decisions. A Weinstube is a small, old, wood-panelled wine tavern where Württemberg reds are poured by the quarter-liter glass and the food is Swabian and handmade. A starred restaurant means a long tasting menu at European fine-dining pace and a reservation booked weeks out. A brewpub is the outlier here, because this is wine country rather than beer country, and Stuttgart has far more taverns pouring Trollinger than breweries pouring their own lager.

Stuttgart's starred kitchens are tasting-menu restaurants run at European fine-dining pace: a set sequence of courses, an optional wine pairing, three hours at the table. Two of the three sit well outside the city center, so work out the ride back before you book. Reserve weeks ahead, not days.
Wine taverns (Weinstuben)
This is the Stuttgart format worth crossing an ocean for. A Weinstube is a small wood-panelled wine tavern, often a few dozen seats, usually open evenings only, run by the same family for decades. Württemberg is one of Germany's rare red-wine regions, and the house grape is Trollinger, a light red the locals order by the Viertele, a quarter-liter glass, roughly eight ounces. Food is a supporting act here, but a serious one.
Swabian cooking
Where to eat the regional dishes without the wine-list framing. Maultaschen are oversized pasta pockets filled with meat and spinach, Spätzle are soft egg noodles scraped straight into boiling water, and Zwiebelrostbraten is a sirloin steak under a heap of fried onions. One address in this group is a brewpub, which in wine country counts as the exception.
Italian
Italian food is Germany's everyday default, and Stuttgart is no exception. These are the unfussy options for the evening when nobody in the group wants another plate of Spätzle.
Asian
Sushi, Japanese grilling and Vietnamese, all within the city center.
International & modern
Steakhouses, burgers, rooftop views and museum restaurants. The Christophorus at the Porsche Museum sits in this group, which makes it the obvious way to build lunch into a museum day in Zuffenhausen.
